Pumpkin Bread - Gluten Free

Pumpkin Bread seems to be a must at this time of year and with it being Thanksgiving this weekend I had to give it a go - the whole family is so pleased I did!

 

Ingredients

  • 1 cup sugar

  • 1/2 cup apple sauce

  • 2 eggs

  • 1/3 cup water

  • 1/2 cup pumpkin puree

  • 1 1/2 cups gluten free flour (I use the baking flour on my website here)

  • 1 t cinnamon

  • 1/2 t salt

  • 1/2 t nutmeg

  • 1 t baking soda

  • 1/2 T baking powder

Directions

Pre-heat oven to 350F


Combine sugar, apple sauce and eggs


Add pumpkin and water to the sugar mixture.


Mix the dry ingredients and then add to pumpkin mix.

Place into a greased loaf pan and bake for approximately 60 mins
