Cheerio Cupcakes

Sunday is our "try out something new" day, since we don't have to be in 100 places at once!
So this morning the kids wanted something different and I didn't want to make something that took forever, this is what I came up with and it was a huge success!



  • 1 tablespoon butter

  • 1/4 cup honey

  • 1/4 cup peanut butter

  • 2 1/2 cups Gluten Free Cheerios



Heat the butter, honey and pb in a saucepan until bubbling, then add in the cheerios and mix until they are all well coated.

Spoon into muffin containers (I used silicon ones so they don't stick, but if you don't have silicon make sure you oil/butter them well).
Press the cheerios down firmly.

They need to cool, I found putting them in the fridge for 15 mins and then freezer for 5 mins worked well.

Store in an airtight container in the fridge if you don't eat them straight away.

For breakfast I topped with Greek

yogurt mixed with blueberries.
