Eggplant Lasagna

Every time I make this I can't believe how good it tastes!

It is a gluten free comfort food without the high carbs or sugar so I can eat it 100% guilt free.

 

Ingredients

  • 1 large Eggplant, sliced length wise ½ - ¾ inch thick

  • Olive oil

  • 1 cup to 1 ½ cups of part skim ricotta cheese

  • 2 large eggs

  • ½ cup grated Parmesan cheese

  • 2 tsp dried oregano

  • 1 jar of marinara sauce (no added sugar)

  • 500 gms extra lean ground turkey or beef  - optional

  • ½ cup grated cheese - optional

 

Directions

Preheat oven to 400 F

 

Arrange sliced eggplant in a single layer on lined baking sheets (brush lightly with olive oil), season with salt and pepper.

Bake for 10 mins on each side

Meanwhile in a pan heat olive oil and cook ground meat (if using) and add marinara sauce.

In a medium bowl whisk together the eggs, ricotta, half of the Parmesan cheese, and oregano.

 

Lightly brush a baking dish with olive oil.

Lay half of the eggplant on the bottom of the dish, next layer half the meat sauce, then half the ricotta mix, repeat layering.

Sprinkle on top the rest of the Parmesan cheese (add half a cup of grated cheese as well if you wish)

Bake until bubbling and golden, 20-25 mins.

Cut into 4 pieces and serve
