Gluten Free Stuffing

After going Gluten Free, getting a nice stuffing for our turkey dinners has always been difficult, but this recipe is easy and makes an amazing stuffing.

Ingredients

  • Corn bread mix

  • 7 strips of bacon

  • 1 Apple

  • 1.5 - 2 cups of low sodium gluten free chicken broth

  • 1 onion

  • 2T thyme

  • 2T no salt seasoning (I used Ms Dash and Epicure seasonings)
     

Directions

The day before bake up the corn bread as the instructions state on the package.


Saute the bacon till cooked then remove from the pan.


In the bacon fat saute the apples (you can also put celery in as well) for 2-3 mins and remove


Saute the onion till transparent

Cut bacon up and mix bacon, apple, and onion together in a bowl, add seasoning and mix then add chopped corn bread and mix.

Add broth to moisten the mix (should be a little like playdoh texture), put into muffin tins (this made 12) and bake at 380F until crisp on top (approx 20 mins)

Enjoy warm with your meal.


They also freeze well so pop the leftovers into the freezer to have with your next roast!
