Meatloaf

Meatloaf isn't something I grew up with, so I was a little hesitant to try it.

But this version is so good!
 

Plus you can chop up and sneak in extra vegetables if you have kids (or significant others) who don't like to eat them!

 

Ingredients

  • 500g ground turkey (or other extra lean ground meat)

  • 1/2 cup salsa (check that there is no added sugar)

  • 1/2 cup cooked quinoa

  • 1 large egg

  • 3 cloves of garlic

 

Directions

Preheat oven to 375° F (190° C).

Combine turkey, salsa, quinoa, eggs, garlic, salt, and pepper in a large bowl and mix well.

Either, shape mixture into shape of a loaf and place on a baking tray lined with parchment paper. Or, use a greased meatloaf pan - I used mini-meatloaf pans to make individual servings that could be put in the freezer.

Bake for 60 to 70 minutes, or until center is no longer pink and meat is cooked through.

Let stand 10 minutes before serving.

Serve with a side of your favorite vegetable
