Quinoa Patties
Quinoa is a staple in our diet and with burger season coming up I love these as an alternative.

Ingredients

2 cups of cooked quinoa

1/2 a bell pepper (I used a yellow one)

3 1/2 Tbsp flaxseed flour
-
3 eggs
-
1/4 cup of feta cheese
-
3 Tbsp salsa
-
salt and pepper to taste

Olive oil or EVOO spray
Directions
Beat eggs, then mix all ingredients together.
Form into balls and then flatten into patties.
Spray a nonstick fry pan and fry each pattie for approximately 3 minutes on each side.
Enjoy!
