Quinoa Patties

Quinoa is a staple in our diet and with burger season coming up I love these as an alternative.

  • 2 cups of cooked quinoa

  • 1/2 a bell pepper (I used a yellow one)

  • 3 1/2 Tbsp flaxseed flour

  • 3 eggs

  • 1/4 cup of feta cheese

  • 3 Tbsp salsa

  • salt and pepper to taste

  • Olive oil or EVOO spray



Beat eggs, then mix all ingredients together.

Form into balls and then flatten into patties.

Spray a nonstick fry pan and fry each pattie for approximately 3 minutes on each side.
