Quinoa Salad

This is actually one of my "go-to" lunches every week, as I can prepare all the ingredients ahead of time and make it in a flash.

Did I also mention it is yummy, filling AND healthy!


Ingredients (for one serving)

  • 1/2 cup cooked quinoa

  • 1/2 cup chopped tomatoes

  • 1/2 cup chopped cucumbers

  • 3/4 cup of cooked chicken

  • 2 Tbsp sunflower seeds

  • 1/4 of an avocado (optional)

  • 2 Tbsps of feta cheese (optional)

  • Balsamic or red wine vinegar



Cook quinoa according to the packet instructions. I cook mine in water, but you could cook it with reduced salt stock to give it a little more flavor.

Personally I cook my chicken breasts in the slow cooker with some salsa so I have enough for 3-4 lunches, but you could cook it in the oven, or purchase cooked chicken from the supermarket.

Assemble all the ingredients in the bowl, top with a little vinegar and sit down for a few enjoyable minutes (hopefully while the kids are otherwise occupied).
