Easter "Birds Nests"

With Easter this weekend, I wanted to send a nut free, gluten free treat to the kids class.

BUT it had to be quick and easy - I had 50 kids to cater for between the 2 classes.

So these little birds nests were perfect - no cooking and took less than 15 mins to do!

 

Ingredients

  • 2 cups of white granulated sugar

  • 1/2 cup of milk

  • 1/2 cup of butter

  • 3 cups of rolled oats (gf)

  • 1 cup of shredded coconut

  • 1/2 cup coca powder

  • 1 tsp vanilla

 

 

Directions

 

Line 2 large baking sheet with parchment paper.

Set aside.

Place sugar, milk and butter in a large saucepan. Over a medium heat bring to the boil, stirring continuously with a rubber spatula.
When at boil, keep it boiling for 2 mins whilst stirring.

In a large bowl mix the oats, coconut, coca powder and vanilla together.

Once the milk mixture is done pour it over the oats mixture and stir well.

Place tablespoons of the mixture on the parchment paper, top with Easter eggs (check the ingredients to make sure they are gluten free if needed).

Let set at room temperature.

They last for up to 5 days in an air-tight container.
